Time for LUNCH!

I have to admit that one of my favorite times of the day is lunch time. Even saying the word LUNCH gets me excited. lol. Why? I don't know. Perhaps it's because it's so long after eating breakfast or maybe because it ties me over until dinner time. Regardless of the reason, I love it! I'm always looking for good, tasty, hit the spot foods to have for lunch!

Being a stay at home mom, I have to prepare lunch for more than just myself, so I seek to make 'lunch' time a joyous time for everyone in my family. This calls for creativity, let's face it, no one wants to eat the SAME thing everday (no matter how good it is). So I do surf the web for exotic fruits and such but when that fails, I get inspirations right from my local grocery store. I don't know where you shop, but my circular has recipe ideas inside and they even have a monthly magazine that's filled with yummy recipes and coupons!!

So today, try something different for lunch, it's basically a 'break' in the day-so why not enjoy what you eat. With some simple planning and a trip to the grocery store, you can wow your family with some amazing treats for lunch (healthy ones included). I'll be sharing some tips on packing lunches for 'picky eaters' (soon)-take on the challenge and give your kids a reason to look forward to eating lunch.

Lunch tips for ALL: Take two of your favorite foods and combine them together for lunch. (don't be afraid) you won't know what it tastes like till you try it. For example, I love turkey and recently i've fallen for avocados. (never had them together). Today I added some avocado slices to my turkey sandwich and BAM! I was smitten. LOL. Add on some dried cranberries, lettuce and bacon and you've got yourself something good to eat.

Tip #2: If you like sandwiches for lunch, try a new type of bread. The grocery aisle is full of variety! (try pitas-they work great for tuna or chicken salad sandwiches)
Tip #3: If your watching those carbs, or you hate bread-try tortilla wraps. You can get anything from whole wheat to sun dried tomato flavored. Or you can use some fresh lettuce as your bread! the sky is the limit.
Tip #4: Try something new! a new spread, a new sauce, a new seasoning on your meats, try something you would NEVER usually eat, you just might like it.

Let's EAT!

Check this out! In efforts to eat a little better this year, my hubby made a NO SALT added pasta dish!



In my house, we love pasta and we're always looking for a new and exciting way to eat it. Pasta is always a quick delicious meal to make when you have a hungry family to feed. I love it because it's so many varieties and can be cooked so many different ways!






So if you like what you see, i'll share this recipe with you-whether you've never tried pasta before or your simply looking for a new twist, you'll definitely want to try this! The dish is named: Cajun Chicken Pasta. I will be sharing more recipes with you all as time goes on, but for now-snack on this comforting dish and let me know how it turns out.

The Moment

A day or so ago, it finally snowed! I was so excited, when I peeped out my window around 10 pm and a soft white blanket of snow was covering my yard. I almost rushed outside to play, or make a snow angel (like I did as a child)-but I managed to restrain myself. LOL. So I just threw on a warm robe and stared outside the window, watching it fall so gracefully to the ground. Nothing mattered in that moment, but the snow-I smiled inside and outside.










By the end of the next evening, the snow was all washed away by rain. Everything had gone back to normal and the day to day grind was back! (Dirty dishes, making lunches, and checking my to-do list a thousand times over). When I finally got a chance to think back on that moment when I peeped outside and watched the snowfall-I was grateful. Grateful that I had seized that moment and enjoyed every minute of it.










Sometimes we get so busy in this thing called LIFE, that we forget to stop and take a moment-a moment to enjoy God and his creations! Yes, as much as we all hate shoveling, God MAKES IT SNOW! So for this New Year, I've resolved to not complain about the snow(as I do every single year!), but to enjoy it (as best I can) as a gift from God. Instead of focusing on all the negatives that come with snow (storms, shoveling and simply being up to your neck in it.LOL), my focus will be on the positives that come with snow: Making snow angels, sledding, making a snowman with my kids or simply enjoying a cup of hot chocolate while watching it fall from the sky!)

Rainy Days!




It's pouring rain outside today and equipped with my rain boots, I'm out and about for the day. I'm excited to embrace the New Year, even with the new challenges and struggles that it may bring. I am encouraged to know that God is always with me, through the good and bad and I can make it with him beside me.






Although the rain outside makes me sleepy and can even make a day seem dreary, I've decided to take a new perspective. The rain is a symbol of God's love pouring out (literally) onto the earth. The plants and trees are all getting a fresh drink from Heaven's fountain and so am I! Imagine if every rain drop that hit the ground was an actual blessing that God sent you from Heaven.


I conclude that YOU(you reading this blog) are blessed, whether you realize it or not. Your blessed to be alive! Blessed to be able to read this blog! Blessed to be able see! Blessed to be you! Take a moment and count up all your blessings. Go ahead-I DARE you!

THE START OF Something NEW

I love a good story, especially success stories! The best part of the story for me, is always the start. I like to know what people went through, overcame and had to conquer-to achieve success in their lives. What I love about the start, is that everyone has one! You have to start somewhere and at some point.

So I want this post to be my start for the New Year. I am trusting God for a successful and prosperous New Year for me and I want this blog to be a part of that New start. Now, I have much ground to cover, but here-i'm starting with my Gift to WRITE! I love to write and the word love is almost an understatement. Every since I could pick up a pencil, I've been writing.

This year I want to make my writing more public, so that I can challenge myself more and as well share my gift with the world. A good friend advised me to publish my goals, so that it would be out there and I would be forced to make good on what I set out to do! So I'm going to try and see if it works.

My goal for 2012 is....................you ready?..................................are you sure?................ok ok, no more suspense-I am FINALLY going to finish my first novel. (deep breathe) ok there it is world, hold me to it!!!
